Gin Barrel-Aged Saison

I 'run' two barrel projects, a gin and a bourbon barrel, organizing a group of brewers to brew the same recipe and then age the beer in the barrel.  As we near the time to empty the barrel, we come up with the next recipe and then fill the barrel the same night we empty it.  

This was a group brew for our gin barrel, which came from Koval, a Chicago distillery.  Besides Hugh and I, those who brewed for this project include CHAOS homebrew club members Americo Ochoa, Ben Resch,   Bianca Alley, and Freddy Zavala.  

We decided to punch up the lemon flavors in this saison by using 100% Sorachi Ace hops (an idea we stole from Brooklyn Brewery's saison).  

In December 2019, it won a bronze medal at the Happy Holidays homebrew competition organized by the St. Louis Brews.
